As an independent chef at Sumo Markthal, you are responsible for the preparation and finishing of dishes from Asian cuisine, including wok, teppanyaki, grill and sushi support. You work independently at your own station and ensure smooth production during the busy lunch and dinner service.

Your most important tasks are.

Independently preparing, portioning and finishing hot dishes according to Sumo's recipe and quality standards.

Operating the wok, teppanyaki plate and grill in an open kitchen, with guests directly watching.

Providing mise en place for your own station and maintaining it during the service.

Checking freshness, quality and presentation of ingredients and dishes.

Monitoring the stock at the station and ordering more from the chef in a timely manner.

Compliance with all HACCP guidelines in the field of hygiene, food safety and temperature control.

Keeping the workplace, equipment and refrigeration clean in accordance with the applicable cleaning schedule.

Guiding and directing students and commis de cuisine at their own station.

Collaborate with sushi chefs, wok chefs and servers to ensure smooth service and a good guest experience.

Thinking about new dishes, specials, seasonal cards and improvements in work processes.

Filling in and replacing the chef or sous chef in his absence, where you take responsibility for the kitchen.

One day you are standing behind the sushi bar with your knife in your hand, the next day you are stir-frying, frying or grilling.
